THE ORIGIN
Nigusse Nare is a smallholder farmer and 2021 COE winner. Before purchasing his current farm, Nigusse used to process coffees in his backyard using traditional and organic practices passed down through generations. Since then, he has started separating small lots to improve quality and traceability, improving his farm and producing higher quality coffees.
THE PROCESS
After careful handpicking and using flotation to sort coffees through density, cherries undergo a 72 hour anaerobic fermentation. Cherries are dried on raised beds with mucilage intact, requiring close monitoring to prevent over fermentation and unwanted flavours.
WHY WE CHOSE THIS COFFEE
Life as a remote smallholder farmer in Ethiopia requires Nigusse to deal with many unpredictable circumstances such as weather and lack of resources. Nevertheless, his 2021 COE win is a result of his dedication to his craft and relentless pursuit of improvement. We are enjoying the lingonberries and sweet yellow peaches, sitting atop a silky mouthfeel and yellow florals!
