THE ORIGIN
Founded in 2009 in Agaro, the Nano Challa cooperative was established through the Technoserve initiative to enhance sustainability and quality in western Ethiopia. As the first washing station in Agaro, Nano Challa set precedence for environmentally friendly and transparent coffee production.
THE PROCESS
After harvesting, cherries go through a rigorous sorting process - first using water flotation to remove floaters then manually. The mucilage is mechanically removed using an eco pulper, which recycles and reduces water usage, before soaking for 8-12 hours. Finally, coffee is dried for another 8-14 hours and transferred onto raised beds for another 7-11 days. This meticulous process enhances the coffee’s acidity and brightness, resulting in a clean and expressive cup.
WHY WE CHOSE THIS COFFEE
We wanted to showcase the effects of climate and terroir on a cup profile. High altitudes and careful processing result in a clean and expressive cup, with the ripe and juicy characteristics that Agaro is known for. This cup has yellow peaches with an apricot sweetness and a lingering brown sugar finish.
