THE ORIGIN

Halo Washing Station is situated at nearly 2100MASL, in the Gedeb region of Ethiopia. This particular washing station buys cherries from 170 smallholder farmers, whose farms range from 0.5 to 2 hectares in size.

THE PROCESS

Cherries go through a classic natural process. After being handpicked and sorted, cherries are left to dry on raised beds with mucilage intact. At an altitude of 2100MASL with lower temperatures, fermentation occurs at a slower rate, allowing flavours to develop further and more consistently, hence producing the depth of sweetness Gedeb coffees are renowned for.

WHY WE CHOSE THIS COFFEE

Coffees from the Gedeb region continue to be one of our favourites, displaying a distinct complexity of flavours ranging from tropical fruits to berries & florals. Previously we showcased a washed process of this coffee, so we are thrilled to be back with a natural.  You’ll  be enjoying a concoction of fruit cocktail, soaked in manuka honey with whiffs of deep violets!
