THE ORIGIN
Finca El Paraiso, founded by Diego Samuel Bermudez is widely recognised to be at the forefront of experimental coffees through advanced processing. Chiroso is of Ethiopian lineage but discovered in Colombia, often prized for its complex sweetness and silky body. This varietal has grown to be popular in recent years for its fruity elegance.
THE PROCESS
Adopting the mossto process, this mucilage medium is used to ferment the coffee in tanks for 12 hours. Subsequently, cherries are submerged in an ice bath to seal in flavours and aromatics from the fermentation. Finally, dried in a dehumidifier under temperature controlled conditions to prevent overfermentation and undesirable flavours.
WHY WE CHOSE THIS COFFEE
We wanted to take this opportunity to showcase how different varietals undergoing the same processing can result in different cups. As a continuation from 2025, where we featured the castillo variety from El Paraiso, chiroso presents a brighter and denser cup. Bursting with red cherries and sweet cola candy, ending with a dense and coating mouthfeel, perfect for those looking for a decadent cup!
