THE ORIGIN
Don Cayito is an award-winning farm owned by the Calderon family, situated 1650-2100masl in the Tarrazu region of Costa Rica. Their farm grows many varietals, ranging from Caturra, Typica to SL28 and Gesha. Having accumulated many COEs over the years, they have grown to be synonymous with producing high-quality Costa Rican coffees.
THE PROCESS
Coffees from Don Cayito are processed at their micro-mill, Los Angeles. In the honey process, ripe cherries are handpicked, pulped & left to dry with its mucilage. Keeping the mucilage intact allows for denser sweetness and body. In addition, slopey terrain and cool climate slow down cherry maturation, resulting in a complex and lively acidity.
