THE ORIGIN
This is our 2nd year sourcing Ayel’s coffees, through our suppliers 2nd Mile & Traconn. As a smallholder producer, access to international markets are only viable through exporters like Traconn who diligently separate Ayel’s coffees from hundreds others. Uraga, Guji is known to produce consistently stellar coffees & we’re humbled to have Ayel’s coffees for the 2nd year running.
THE PROCESS
Ripe cherries are stored & fermented in closed tanks for 72 hours. This anaerobic fermentation is a new process Ayel is trialling with the help of Traconn. The coffees are then removed & dried on raised beds which are covered during the hottest parts of the day as well as the evenings. The consistent raking produces a clean expression of the anaerobic process.
WHY WE CHOSE THIS COFFEE
It’s always been our dream to source coffees from a smallholder farmer in Ethiopia, be it through the hands of the value chain. This allows us a unique perspective to how unique the taste experience can be, compared to the usual blend of hundreds of smallholder farmers’ coffees. Ayel Anaerobic is laden with tropical fruits & juicy whilst still retaining clearly the lovely florals of Ethiopian coffees.
