Ayel is the definition of a smallholder, cultivating less than 3 hectares of land. He grows 74110 and 74112, cultivars developed by the Jimma Agricultural Research Centre (JARC) for their drought resistance and superior taste qualities.
This lot was processed as a Natural, as single producers often lack the resources for pulping and wet fermentation. The slow, careful drying for up to two weeks resulted in a cup we find comforting and harmonious. The coffee opens with dark plums taking the center stage, complemented by a rich note of orange chocolate. Cacao nibs emerge gently throughout, adding a deep and nuanced complexity to the flavor.
