We’re excited to bring you a truly unique coffee from Zelalem Processing Station, a vertical integration project by Tracon Coffee Export. This coffee exemplifies innovation and quality through close collaboration between producers and exporters.

Zelalem Uraga Processing Station supports over 500 smallholder farmers, each with an average of 1 hectare dedicated to coffee cultivation. For this processing technique, only extra-ripe (dark purple) cherries are selected, placed in plastic barrels, and fermented with Mossto (liquid/mucilage from a previous fermentation) for 36 hours in a closed environment. The cherries are then dried on raised beds for up to two weeks.

Zelalem Mossto Natural showcases a confected sweetness reminiscent of dark cherries and raisins. The mouthfeel is full, with lively aromatics and the lightness of fresh red wine, finishing with a long, sweet note of dried mango. We hope you’ll enjoy this coffee as much as we do!
