THE ORIGIN
Natalia Brito is a second-generation Brazilian producer that owns multiple farms and an exporting company, Jagaura. Alongside the conventional Brazilian varieties - Catuai and Mundo Nuvo, Natalia also began planting Paraiso and Gesha on her farms after the success of her Arara lots.
THE PROCESS
This coffee goes through a classic natural process, cherries are picked and laid on raised beds to dry. During drying, the mucilage & esters are what creates the characteristic sweetness and density of natural coffees. Close monitoring and periodic turning of the cherries are necessary to prevent overfermentation and undesirable flavours.
WHY WE CHOSE THIS COFFEE
Arara is a natural cross from the Sachimor varietal and has gained popularity amongst Brazilian producers for its high cup quality and high-yielding capabilities. In this cup we are tasting yellow plums, sugarcane sweetness layered with marzipan.
