Our second showcase of coffees produced by Paola Trujillo from her farm, Patio Bonito! This is a Sidra variety, known for its fruit-forward qualities and complex florality. Paola is ambitious and has introduced new quality cultivars to her farm.
This coffee is unique in its processing, where whole cherries spend 30 hours submerged underwater. The cherries are then pulped and rinsed further to remove the remaining mucilage before being dried on shaded raised beds. This fully washed process highlights the coffee's intense sweetness and complex florality, which we truly enjoy.
Paola’s coffees are a prime example of the dedication to improving quality. As more producers in Colombia focus on experimental processing methods, it’s encouraging to find clear and crisp washed coffees like Paola’s. We hope you enjoy this coffee as much as we do!
