We are incredibly humbled to have a world-class washing station to process a special lot for us! Through our friends at Latanier Coffee, we were not only able to showcase coffees directly from Mahembe’s own Gituntu farm but also fulfil our ambition to process something unique for ourselves!
The process involves a 24-hour whole cherry anaerobic fermentation to begin the fermentation process in a more controlled environment before the second stage of fermentation. The cherries are then pulped and fermented for another 24 hours in the open before being dried on raised beds as a “Honey” process. Across the three origins where we executed this process, the drying times on raised beds were the most significant difference, leading to very distinct flavour expressions!
We love the clarity and silky mouthfeel of this coffee. The fresh acidity of mixed berries brings balance to the clear sweetness of red globe grapes, finishing with lively hibiscus aromatics. We hope you enjoy it as much as we do!
