Our “EXPERIMENTAL” coffee for August is from a new Brazilian farm we’re humbled to showcase, Jaguara! This farm has been pushing the boundaries of what Brazilian coffees can be, especially with processing & drying. Producers Natalia & Andre Luiz have sought to build long term relationships that focus on quality instead of the usual commercial path.
Arara is a newer variety grown at Jaguara, where Natalia & Andre usually grows Catuais, Mundo Novos & Catucais. It is a natural cross from a selection of Sarchimors & has gotten a lot of popularity from Brazilian producers for its high-yield capabilities as well as excellent cup qualities.
This particular lot was dry fermented in whole cherry form for 80 hours, before being dried on a mix patios & heated boxes. This increases the fruity characteristics of this coffee, showcasing a juicy acidity of Maraschino cherries & a velvety mouthfeel. We hope you will enjoy this coffee as much as we do!
