Our 6th iteration of Ijen Lestari's coffees this year is a testament to Dandy's processing prowess. This coffee went through Anaerobic Mossto Fermentation Natural, a technique popularised in 2022 by World Barista Champion Anthony Douglas & producer Nestor Lasso.
Mossto is the resulting liquid obtained from a previous fermentation process. This liquid contains precious flavour & aromatic compounds that could increase the fruit perception of most coffees. Dandy adds the Mossto to the cherries before fermenting in a closed barrel, allowing the cherries to ferment for 72 hours.
The result is an incredibly fruit-forward coffee. We love the cooked fruit acidity, reminding us of raspberries & pomegranates, and how it finishes with a syrupy mouthfeel & lingering cacao aftertaste.
