We’re humbled to share this delicious coffee by Agnes & Felix of Nova Coffee. This coffee is a continuation of the success they achieved in the Best of Rwanda competition, where they emerged in 1st place with an Anaerobic Natural lot. This coffee underwent the same processing & drying protocols, resulting in this amazing balance of sweetness and flavours.
Rwanda, as an origin, has only begun experimenting with different fermentation and drying techniques over the last few years. This lot was fermented for 72 hours in an anaerobic environment before being moved to raised beds for drying. The cherries were laid in thin layers to promote a more even drying, resulting in this clean flavour expression.
We selected this coffee for its unique expression of Rwandan coffees, with notes of Yuzu & the sweetness of pears. The experience culminates in a gentle lilac aftertaste, complementing the juicy mouthfeel of this coffee. We hope you will enjoy this coffee as much as we do.
