Our ‘EXPERIMENTAL’ Coffee this month is produced by the Rodriguez family from Bolivia. They own a collection of farms across two regions, Caranavi and Samaipata. Pacamara, a cross between Pacas and Maragogipe, is known for its large bean size, often resulting in a full, heavy mouthfeel. This lot underwent 70 hours of Carbonic Maceration, followed by drying on raised beds before being transferred to a mechanical dryer.
We love how the cultivar and processing combination directly translates to the cup quality. The coffee opens with the bold intensity of blackcurrant juice and mixed berries, delivering a burst of fruit-forward flavours from the outset. Subtle notes of apple tea weave through the experience, adding a gentle, aromatic nuance and enhancing the coffee’s body. The ripe acidity creates a vibrant structure, while the cordial-like sweetness and dense mouthfeel complete the flavour journey with elegance. A truly memorable cup that celebrates innovation and craftsmanship.
