THE ORIGIN
Las Margaritas is one of a few farms belonging to Cafe Granja La Esperanza & has produced multiple award-winning coffees in various competitions. Hailing from Valle Del Cauca, the microclimate across their farms are well-suited to grow a range of cultivars. At Las Margaritas, they grow Sidra alongside other quality cultivars like Pink Bourbon & Geshas.
THE PROCESS
After strict ripe picking, the cherries are first floated to further remove less than optimal cherries. They are then fermented underwater for a 18hr aerobic fermentation before being pulped, followed by another 24hr aerobic fermentation. This double fermentation enhances the complexity of flavours. After washing off the mucilage, beans are left in mechanical dryers controlled at 38°C for 3-5 days to dry.
