THE ORIGIN

Las Lagunas and Los Alpes are the two farms that make up the renowned Janson family estate — they’ve been producing coffees in the Volcan Baru region of Panama for over 30 years & they’ve done an excellent job maintaining their ecological responsibilities on top of producing some of the best coffees in the world!

THE PROCESS

Thanks to the unique climatic conditions at their mill, the producers can extend the fermentation process well beyond the norm. Whole cherries in sealed tanks underwent 72H of anaerobic fermentation, creating exceptional depth and complexity. A meticulous pulping and rinse afterwards ensures the clean, crisp flavours. Cherries are then left to dry on raised beds for 7 days.
