THE ORIGIN

Fabio Caballero Jr. is a 5th generation coffee producer, from the famed Caballero family, who has won numerous COEs throughout the years. Fabio founded La Salvaje in 2019 with his grandfather, Don Fabio Caballero, planting seeds from their COE winning farm, San Francisco, mainly growing Geshas and Javas. 

THE PROCESS

Unlike a traditional washed process, cherries are handpicked and pulped first, then placed in covered barrels for a 48H fermentation. This increases the complexity of the Gesha variety, before it is washed and dried under shaded raised beds 25-30days for an exceptionally clean coffee.

WHY WE CHOSE THIS COFFEE

We are so humbled to be serving the same lot that won Fabio’s first COE #1, on his very first full harvest! This is an exceptionally special lot, as Fabio Jr. deviated from using traditional washing methods passed down by the Caballeros, resulting in this truly stellar cup - with notes of green apples, juicy apricots and lingering honey blossom!
