THE ORIGIN
Juan Peña is a world renowned coffee producer, farmer and co-founder of Cafexporto, an exporting company. Founded in 2009, Hacienda La Papaya originally grew roses, until Peña decided to venture into coffee growing after a devastating harvest. Since then, La Papaya has been celebrated for its meticulous and science-driven innovation, elevating Ecuador’s global positioning in specialty coffee.
THE PROCESS
Cherries are handpicked, pulped and washed for 15H with Andean spring water. Drying spans over 11 days in solar drying rooms, with temperature & humidity sensors that regulate airflow and record data to ensure stable and consistent drying conditions. This precision helps to preserve complex aromatics and extend shelf life.
WHY WE CHOSE THIS COFFEE
We wanted to highlight the Typica Mejorado varietal - a hybrid of Typica and Ethiopian lineage. Native to Ecuador, this varietal balances the bold sweetness of Typica and fruit complexity of Ethiopian heirloom. As a fully washed coffee, we feel it best expresses Ecuadorian terroir - with sweet tangerines, chrysanthemum florals and demerara sugar.
