THE ORIGIN
Juan Peña is a world renowned coffee producer, farmer and co-founder of Cafexporto, an exporting company. Founded in 2009, Hacienda La Papaya originally grew roses, until Peña decided to venture into coffee growing after a devastating harvest. Since then, La Papaya has been celebrated for its meticulous and science-driven innovation, elevating Ecuador’s global positioning in specialty coffee.
THE PROCESS
Picked cherries are first sorted according to density by flotation. After using a mechanical depulper, the cherries are fermented with their mucilage intact. Finally, they are washed with clean Andean spring water and dried on raised beds for 9-18 days, allowing clean and floral notes to shine through.
WHY WE CHOSE THIS COFFEE
Using Panamanian Gesha seeds from Cafexporto’s genetic bank, they are rerouted in Ecuadorian soil. Over the years, these plants have taken on Ecuadorian soil depth and flavours whilst retaining its classic floral lineage, unfolding delicate notes of apricot, honey blossom and silver needle tea in this cup.
