THE ORIGIN
In 2018, Jose Mancia inherited part of his family farm, Fincona, to grow and process his own coffees. He is also part of the Intibucá Project headed by Nordic Approach, this initiative aims to improve the infrastructure and facilities of producers, and better lot traceability.
THE PROCESS
Farmers carefully select and sort coffee cherries, then spread them on raised beds for drying. During drying, the mucilage & esters are what creates the characteristic sweetness and density of natural coffees. Close monitoring and periodic turning of the cherries are necessary to prevent overfermentation and undesirable flavours.
WHY WE CHOSE THIS COFFEE
Honduran coffees have the potential to be exceptional with the right sourcing and processing methods, resulting in a deeper and richer cup compared to its neighbouring countries. Coffees from this region tend to have a softer acidity and more prominent fruit notes. You will be enjoying sweet green kiwis layered under oolong tea and rich chocolatey truffles!
