THE ORIGIN
Felipe Arcila is a third-generation producer in the Quindio region of Columbia, known for his experiential processing and owning multiple farms including Santa Monica and Villarazo. He mainly grows exotic cultivars like Sudan Rume, Papayo and Pink Bourbon.
THE PROCESS
Cherries are picked and sorted, placed in sealed tanks for a 30H anaerobic fermentation. Processed at La Pradera, Cofinet’s processing station, this longer fermentation strikes a balance of sweetness and acidity. After pulping and rinsing, cherries are laid on raised beds to dry.
WHY WE CHOSE THIS COFFEE
Sudan Rume originates from the forests in Southern Sudan, bordering Ethiopia. Mainly driven by floral and fruit expressions, it’s also commonly used as parent variety for newer hybrids due to its high cup quality. In this cup, you will be enjoying zesty notes of grapefruit, honeysuckle and lemon tea!
