THE ORIGIN
Ijen Lestari is a relationship we hold dear to us over the past four years of working together. The Dharmawan family’s tenacity and resilience to produce award winning coffees, despite being a small family farm with limited resources, never fails to impress us. We are so humbled to be continuing this relationship into 2026.
THE PROCESS
Cherries are handpicked and sorted, then placed underwater for a 24H fermentation. This allows for a slower and controlled flavour development, before being transferred into sealed tanks for another 24H of anaerobic fermentation. This accelerates fermentation and enhances the depth of sweetness. Finally, coffees are left to dry on raised beds for up to 2 weeks.
WHY WE CHOSE THIS COFFEE
We are incredibly excited to showcase our second custom process with Ijen Lestari - Special Natural. Through trial and error, we have achieved the goal of our process - one that balances the dense, fruit flavours of an anaerobic coffee, but retains the elegance and silky mouthfeel of a washed coffee. Tropical jackfruit shines in this cup, complimented by the sweetness of cantaloupe with the complexity of starfruit.
