THE ORIGIN
In the Nyeri region of Kenya, Gachatha Coffee Factory is one of the washing stations that is managed by the Gachatha Farmers’ Cooperative Society (GFCS), which collects cherries from many smallholder farmers. This is an “AA” lot, which comprises mostly large beans, AA and AB being the most common sizes.
THE PROCESS
Cherries undergo a traditional washed process. After harvesting, cherries are pulped using a disc pulper to remove fruit skin. Next, an overnight dry fermentation helps to break down remaining mucilage. Cherries are then rinsed and laid on raised beds to dry.
WHY WE CHOSE THIS COFFEE
We are starting off our yearly Kenyan coffees with Gachatha, we favour “AA” lots for their big juicy body and dense flavours. This coffee exhibits classic flavours typical of coffees from the Nyeri region - bright, vibrant and full. We are tasting blackcurrants, rhubarb jam and violet florals!
