THE ORIGIN
El Laurel is a 12 hectare farm home to many coffee trees, wildlife and the Ramirez family. Oscar’s ancestors used to traditionally depulp coffees by hand, dry with sieves and sell in their local markets. Since then, he has adopted modern processing methods to increase efficiency and volume, whilst preserving quality and sustainability. He has reaped his compounding efforts this year by winning COE #3!
THE PROCESS
This lot was processed as how a traditional washed coffee would be. Cherries are hand picked and floated to separate low density cherries, pulped and dry fermented for 10-14H under shade. After fermentation, mucilage is washed off and cherries are laid on raised beds for 12-15 days.
WHY WE CHOSE THIS COFFEE
It is our first time showcasing the Parainema variety, a derivative of Sarchimor, developed by IHCAFE in the 1980s to combat coffee leaf rust (CLR). Parainema is not only resistant to CLR but also a high yielding dwarf plant. Despite hybrids having a reputation for lower quality flavours, a Parainema won COE 2017, a testament that cup quality and hybrids can co-exist. You’ll be enjoying the crisp acidity of champagne grapes, sweet nectarines and hibiscus!
