THE ORIGIN
This explosive coffee is the brainchild of 2 powerhouse producers, Nestor Lasso & Johan Vergara. This Chiroso variety is grown at El Diviso, amongst other exotic varieties like Ombligon & Aji Bourbon. The cherries are brought to Penas Blancas, a new processing facility owned by Johan Vergara. Chiroso is an Ethiopian Landrace that has evolved in the Colombian terroir & has gotten popular amongst producers for its fruity elegance.
THE PROCESS
This Chiroso lot underwent the popular “Thermal Shock” process, where ripe cherries are first sterilised to remove any impurities before they are soaked in warm water of 40 degrees Celsius upwards. They are then quickly transferred to cold water to “shock” the cherries, which producers believe seals the aromatics of the coffee. The cherries are finally dried slowly as Naturals, which further intensifies the flavours & aromas of the coffees.

Chiroso Thermal Shock Natural is a unique perspective on how far processing has advanced, elevating coffees to newer heights. We believe the process emphasises the varietal’s prominent fruit notes, like strawberry & grapes. The variety also showcases floral characteristics that transform into a beautiful mint aftertaste.
