THE ORIGIN

Discovery Coffee is part of Ching’s Family Farm, growing specifically Gesha & Java in Nan, Thailand. Chartchai was the winner of both 1st and 2nd place in last year’s Cup of Excellence, with a fully washed Gesha as well as a honey processed one, of which we had the pleasure of showcasing both lots. We were convinced we wanted to continue this relationship & we’re incredibly humbled he shared this beautiful coffee with us this year.

THE PROCESS

Ripe cherries are hand-sorted before being depulped. This removes the skin & flesh leaving behind the sticky, nutrient rich mucilage. Chartchai dries his coffees in parabolic dryers, which acts as a shield against intense sunlight. This allows the coffees to dry slowly yet surely, creating a complex and clean taste experience. 

WHY WE CHOSE THIS COFFEE

This coffee comes from the same lot that won this year’s 3rd place in Thailand’s Cup of Excellence. We’re privileged to showcase how far Thailand has come as an origin, be it from cultivating exotic varieties or meticulous processing. This Honey-processed Gesha is absolutely delicious, with distinct aromatics of honey blossom and gentle flavours of tangerine as well as golden kiwi.
