THE ORIGIN
David Flores is a third generation farmer and helms El Morito, where he aims to improve the lives of smallholder farmers by directly exporting their coffees whilst ensuring quality and traceability. The Flores family also prioritises protecting their ecosystem, favouring compost over fertiliser to improve their soil conditions.
THE PROCESS
Cherries are picked and fermented for 8-12H. After mechanical depulping, cherries are rinsed of their mucilage and dried on raised beds. These solar drying tents trap heat to lower internal humidity, resulting in a more consistent drying process and a longer shelf life.
WHY WE CHOSE THIS COFFEE
Originating in Peru, this is our first time showcasing the Marshell varietal. Whilst its lineage remains highly debated, we believe it is a Bourbon mutation, known for its rich sweetness and balanced acidity. In this cup we are tasting baked apples, brown sugar and chamomile!
