We return to one of our favourite washing stations in Ethiopia for this month’s ‘CLASSIC’ coffee – Danche! This is the third consecutive year we’ve showcased coffees from this washing station, situated at 2,000–2,300 metres above sea level (MASL) in the Gedeb region of Yirgacheffe.
At this exceptionally high altitude, cherries take longer to mature, developing greater sweetness and complexity. The washing station prioritises ripe picking and incentivises the smallholder growers to deliver only ripe cherries. After pulping, the coffees are sorted in grading channels and wet fermented for up to 72 hours.
Danche offers a juicy yet soft acidity, complementing the ripe fruit sweetness reminiscent of white peaches and red berries. The mouthfeel is silky, with a long floral aftertaste of honeysuckle. We hope you’ll enjoy this coffee as much as we do!
