THE ORIGIN

Chelbesa #2 comes from the renowned washing station in the Worka Gedeb region of Yirgacheffe, owned by exporter SNAP coffee. Chelbesa gathers cherries from roughly 170 farms.  At an incredibly high altitude of 2100 MASL, the surrounding farms grow mostly Kurume and Dega varietals.

THE PROCESS

Handpicked cherries are pulped and placed in ceramic tanks for a 72H fermentation.  At this high elevation, slower maturation results in smaller but denser cherries, producing the sweet and intense cups Gedeb is known for. After fermentation, cherries are laid out on raised beds to dry for 10-12 days.

WHY WE CHOSE THIS COFFEE

Ethiopian coffees remain our favourites for their prominent fruit and floral characteristics. We especially enjoy them from the Gedeb region, for their distinct acidity, deep sweetness and whiff of florals. You will be enjoying a boozy expressive notes of passionfruit, wine gums topped with yellow florals!
