THE ORIGIN
Banko Chelchele is a washing station operated by TRACON in the Worka Gedeb region of Ethiopia. This region is known for producing highly aromatic and complex coffees & it has fast become one of our favourites. Chelchele serves over 300 smallholder farmers, mostly growing choice varieties like Kurume, Wolisho, Dega & 74110.
THE PROCESS
This coffee underwent a “CLASSIC” fully washed protocol by Ethiopian standards; ripe & sorted cherries are depulped before being fermented underwater. At higher elevations, fermentation times can be as long as 72H. The coffees are then rinsed & dried slowly on raised beds for up to 25 days.
WHY WE CHOSE THIS COFFEE
This is our 2nd year featuring Chelchele, after a natural processed lot won our hearts last year. In spite of our focus showcasing cultivars, Ethiopia is unique where most lots are a mix of at least 3 to 4 heirloom varieties. Banko Chelchele is crisp, with notes of yellow peaches & white grapes finishing with a gentle touch of honeysuckle.
