THE ORIGIN
Ayel’s farm sits at 1900 MASL in Uraga, Guji. Growing mainly JARC 74110 & 74112, his entire operation is overseen by him & his family. We were incredibly fortunate to come across Ayel’s coffee in 2024, through TRACON & 2nd Mile. 3 years later, we’re in awe how the coffees have continually improved & we look forward to what the future will hold for Ayel.
THE PROCESS
Ripe cherries are sorted and placed in airtight tanks for a 72H anaerobic fermentation. During fermentation, natural sugars and fruit flavours are essential for creating the characteristic sweetness and density of natural coffees. Whole cherries are then dried on raised beds.
WHY WE CHOSE THIS COFFEE
It is our dream to source coffees directly from smallholder farmers in Ethiopia, offering a distinct perspective on taste compared to blended coffees. Ayel’s coffee has evolved over the years, this time showcasing a tropical complexion like citric pineapples, mango tea and violet florals.
