We’re really excited to present a unique combination of cultivar & processing for this month’s “EXPERIMENTAL” showcase! The Ombligon variety was discovered by Luis Anibal near his farm in Huila, Colombia. The exact lineage is still unknown, but many believe it to be from an Ethiopian Landrace. Instead of using the traditional dry ferment & washed process, the cherries are fermented underwater for 30 hours. This begins the development of flavours, also allowing the seeds to absorb the esters as much as possible. The coffees are then pulped, rinsed to remove any remaining mucilage before being dried on raised beds.
This Ombligon by Luis Anibal displays characteristics that’s unique to the cultivar like its herbaceous sweetness atop the round mouthfeel that’s characteristic of Colombian coffees. We hope you will enjoy this unique coffee as much as we do!
