We’re excited to present a unique variety grown in the Santa Ana region of El Salvador by the Salaverria family at their farm, San Francisco! This lot is made of entirely Batian variety, more commonly grown & featured in Kenya.
Batian is an introgressed variety, which means that its genetics are crossed multiple times across a few cultivars. This process can take many years, as each cross may require at least a generation to ensure the plant’s stability. This is one of the first years of a full harvest for the Salaverria’s Batian plants & we are excited to see how it will continually improve over the years! The cherries were pulped with an eco-pulper before being rinsed thoroughly with water to remove an excess mucilage. The coffees were then dried on raised beds to the optimum moisture content.
San Francisco Batian offers a crisp apple-like acidity, reminiscent of Kenyan coffees! The sweetness reminds us of cooked fruits with a layered yet silky mouthfeel, similar to Pu’Er tea. This coffee is truly a marriage of the distinct characteristics between the Batian variety & the terroir El Salvador is recognized for!
