Following our success last year collaborating with Mahembe Coffee for our “Special Honey” project, we decided to take it up a notch by trying something different this year. We spoke to the producer Willy at length about what could be improved further & he suggested drying it as a “Special Natural” to further accentuate the sweetness of the coffee.
Cherries from Gituntu - Justin's family farm, are placed in tanks for a 24Hrs Anaerobic fermentation. This kickstarts the formation of aromatics & flavours, before being moved to a shaded environment for a further 24H Aerobic fermentation. The cherries are finally moved to raised beds to be dried for up to 2 weeks, ensuring a clean cup.
We're humbled to have begun this collaboration, an opportunity to explore the possibilities of elevating Rwandan coffees. This coffee is jammy, with prominent notes of Blackcurrant & Moon Drop Grape. We hope you will enjoy this coffee as much as we do!
