Our 2nd showcase from Las Flores after the unique Lactic Washed Sidra is an Anaerobic Washed process of the same variety! Jhoan Vergara is celebrated for his unique approach to coffee processing, resulting in some truly memorable cups. Sidra is also a cultivar that’s coveted for its floral & fruity qualities.
Strictly ripe cherries are selected to be fermented in tubs for 40 hours. In an anaerobic environment, volatile aromatic & flavour compounds are developed at a slower rate, allowing for more depth & complexity. The cherries were then removed, pulped & gently rinsed to remove excess mucilage before being dried on raised beds.
We selected this coffee for its unique perspective on how careful processing can showcase a different side to a cultivar. In this case, the Sidra retains its juicy mouthfeel & lively acidity yet the complexity is elevated with notes of Kaffir Lime & Rooibos Tea. This is truly a unique coffee & we hope you will enjoy it as much as we do.
