This is our 3rd & final coffee from Bolivia, from the Los Rodriguez family. Kusillo is one of 10 farms owned by the Los Rodriguez family, which started when Pedro built a wet mill to work with smallholder farmers to process their cherries. Now, Kusillo sits beside their first farm, La Linda which is also near the wet mill Buena Vista.
2 varieties are grown at Kusillo, Java & Red Caturra. Typically at the altitude of 1500MASL, the Java ripens a little earlier followed by the Red Caturra. The cherries are picked by trained pickers from the Bolinda community & hand-sorted before being brought to the drying tables. The natural process usually begins with pre-drying on the raised beds before the cherries are finished off in the mechanical driers to the optimum moisture content.
We selected this coffee for its mouthfeel & sweetness, with its jammy blackberry character as well as cooked apples. This is a prime example of how the Los Rodriguez family has utilised their facilities to explore different flavour profiles for the cultivars that they grow.
