Our final lot from Ijen Lestari is a clean & juicy Fully Washed coffee, a refreshing perspective to the fermentation-forward coffees that we’ve had from them over the last few months. This lot truly showcases their ability not only as a processing station, but also the great relationship they possess with the smallholder farmers that contribute to these lots. 

The cherries that make up this lot come from a village called Jampit, located 1200-1600MASL in the Ijen mountain region. For the last few years, the quality of cherries and picking have greatly improved, the first & most important step to producing great coffee. The rigorous sorting done at the processing station also plays a huge part in ensuring only sweet, ripe cherries are pulped & dry-fermented for 12-18 hours before being rinsed and dried on raised beds. 

We selected this lot simply for its clear display of how clean Indonesian coffees can be. Despite the numerous awards won by the process-driven coffees, the fully washed lot was the coffee from Ijen Lestari that won us over with its poached acidity & gentle sweetness.
