Our “CLASSIC” coffee for March is an elegant coffee from Idido, Ethiopia! This washing station belongs to Mekuria Mergia, a young entrepreneur who’s worked his way up from collecting cherries from smallholder farmers & selling them to washing stations. He is now the founder of Wete Ambela, an exporting company that also owns a few washing stations in Yirgacheffe, Guji & others.
The processing carried out at this washing station differs slightly from the “CLASSIC” techniques in most stations in Ethiopia; the cherries are pulped to remove the mucilage and soaked for 48 hours underwater. This soak removes the balance of the mucilage with minimal fermentation. Finally the coffees are moved to dry on raised African beds for up to 21 days.
We selected this coffee for its outstanding florality, an attribute that’s distinct from Ethiopia. The minimal fermentation reveals gentle & delicate flavours of yellow plums as well as light honey. We hope you will enjoy this coffee as much as we do!
