Danche from Gedeb, Ethiopia is consistently one of our favourite washing stations & we are humbled to showcase a “CLASSIC” natural processed lot this month! This lot is a continuation of January’s Fully Washed version & we hope our guests can appreciate how various processing techniques result in different flavour expressions.
Sitting at an impressive 2000-2300 MASL, Danche buys from around 400 smallholder farmers who deliver ripe cherries. At this elevation, farmers typically harvest their coffees later than in most parts of Ethiopia. The cherries are meticulously hand-sorted for the natural process as this will greatly impact the final quality. They are then brought to the drying beds where they are dried in thin layers to achieve a clean cup profile. The drying process can take up to 3 weeks for naturals & is highly dependent on the weather.
