It’s our pleasure to return to Villa Betulia with this remarkable Pink Bourbon from Luis Anibal Calderón—marking our third feature of his boundary-pushing coffees.
Luis is one of Huila’s most forward-thinking producers, with a deep commitment to innovation and quality. After decades of growing commercial varieties, he made a bold shift in 2012, focusing on exotic cultivars such as Pink Bourbon, Gesha, and Java, with a strong emphasis on precise post-harvest protocols. His farm, Villa Betulia, located in the lush mountains of Acevedo, sits at around 1,500–1,600 meters above sea level, where the cool climate and rich soil create ideal conditions for slow, flavour-intensive maturation.
Pink Bourbon itself is a rare variety with a vibrant lineage, thought to have descended from Ethiopian landraces rather than traditional Bourbon genetics. It is prized for its vivid acidity, tropical fruit complexity, and refined floral character, all of which are amplified through Luis’ careful cultivation and processing.
For this lot, he implemented a 40-hour anaerobic fermentation in sealed tanks, coaxing out complex fruit esters while preserving the coffee’s natural clarity and vibrancy. The cherries were then slowly sun-dried on raised beds under controlled conditions, locking in layered sugars and amplifying the varietal’s tropical profile.
The cup delivers everything we’ve come to expect from Luis’ work: passionfruit’s lively pop evolves into dried longan’s honeyed depth, all carried by a silky, wine-like body that lingers with a cranberry-like finish. It’s a masterful balance of innovation and terroir—an expressive showcase of Pink Bourbon’s brilliance, and a proud reflection of the evolving landscape of Colombian specialty coffee.
