We’re thrilled to be showcasing another coffee by Jairo Arcila from Santa Monica, one of his many farms in Quindio, Colombia. Pink bourbon is widely known to have Ethiopian landrace roots, typically accompanied by a floral and fruity complex cup profile.
Despite being renowned for his innovative processing, this month we opted for a fully washed coffee instead, to highlight the distinctive characteristics of a pink bourbon. Coffee cherries are floated and hand-sorted post harvest, followed by a 30-hour underwater fermentation before being pulped and dried. Wet fermentation breaks down the mucilage, resulting in a cleaner and brighter cup.
Our iteration of this coffee illustrates a deep ripe acidity, paired with sweet purple plums atop a full mouthfeel, reminiscent of a rich blueberry tea. We’re excited to be featuring yet another pink bourbon and hope you enjoy it as much as we do!
