The "Pinnacle Series" is a showcase of coffees that we believe can stand the scrutiny of competition. This is usually reserved for coffees that were specially and meticulously grown for that particular purpose. Our goal is to showcase these coffees in the most accessible manner, for everyday coffee drinkers to understand that there are levels to coffee quality if they should seek. 

May's iteration comes from the Quindio region of Colombia. Jardines Del Eden is simply a farm that was created to cultivate high quality cultivars with experimental post harvest processing for the sole purpose of exploring what lays beyond. This lot is made of Castillos- a common cultivar by Colombian standards, yet what sets it apart is the meticulous hand sorting for strictly ripe cherries & a unique fermentation method called Ice Fermentation.

Cherries are first fermented in tubs without oxygen for 24hrs before being placed in Grainpro bags for a further 50hrs. Finally they are frozen in ice & this shocks certain compounds & preserves it whilst also allowing further fermentation to happen for 72hrs. The coffees are then dried on raised beds under a constant temperature of 35deg Celsius until the desired moisture level. 

This coffee is definitely not for the faint hearted! With multiple stages of  fermentation happening, you can expect a flavour explosion! Our goal was to streamline the flavour experience, focusing on the confected acidity & candy sweetness which reminds us of dehydrated pineapples and orange gummies. The aftertaste lingers with notes of negroni, completing this incredibly complex coffee. We hope you will be able to appreciate the extensive Processing on this coffee & how it elevates the common Castillo to this unique heights!
