This is the 3rd & final coffee we’re showcasing from Paola Trujillo’s farm, Patio Bonito. The first two coffees, a Wush Wush as well as a Sidra got us very excited about the level of quality from Paola & we’re ecstatic to present a unique Typica by her!

Typica is a traditional & one of the first known cultivars to come out of Ethiopia. Many of the existing cultivars are progenies or mutations of Typica. Whilst known to have superior cup qualities, they are very susceptible to leaf rust & other diseases. Through Paola’s careful expertise, the Typica is thriving alongside the other exotic cultivars. She employs a Whole Cherry underwater fermentation for 30 hours before pulping, washing & drying them on raised beds to achieve clean, crisp flavours. 

We selected this coffee to showcase how excellent farm management can bring a traditional cultivar to greater heights. This Typica is incredibly sweet & comforting with notes of red cherries, kumquat as well as a lightness of a smooth breakfast tea. We hope you will enjoy this coffee as much as we do.
