We’re excited to present a unique coffee produced by Johan Vergara from his farm, Las Flores. Johan’s coffees have been increasingly popular especially with his open experimental approach to processing and drying. Las Flores began in 1990 & has slowly been flourishing since Johan’s family made the decision to focus on specialty coffee in 2006. Las Flores is home to a range of quality cultivars like Sidras, Wush Wush & Pink Bourbons.
This lot underwent a 2 stage fermentation; a 24 hours dry fermentation as whole cherries sets the stage for the yeasts & bacteria to begin metabolizing the sugars. The cherries are then transferred into Grainpro bags & covered at a low temperature. This allows for a prolonged duration of the bacteria to continue feeding on the carbohydrates, producing a concentration of lactic acid. The cherries are then pulped, rinsed & dried on raised beds for that clean, lively expression.
We selected this coffee for the unique combination of varietal & processing. The Lactic process brings out the creamy mouthfeel Sidras are known for as well as a crisp florality reminding us of lemon myrtle. This coffee is a great showcase of a producer’s expertise in processing to elevate an exotic cultivar to greater heights. We hope you will enjoy this coffee as much as we do.
