Fabio founded La Salvaje in 2019 with his grandfather, Don Fabio Caballero, planting seeds from their COE winning farm, San Francisco, mainly growing Geshas and Javas. \u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTHE PROCESS\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eUnlike a traditional washed process, cherries are handpicked and pulped first, then placed in covered barrels for a 48H fermentation.
