We’re excited to showcase a unique cultivar by Diofanor Ruiz, from his farm La Divisa! This lot is 100% Papayo, a unique mutation that occurred in Huila. The cultivar is named such due to its appearance, displaying orange hues when ripe as well as its papaya-like shape. 

 

Diofanor has been around coffee his whole life, but only in 2005 did he taste his coffees for the first time. Since then, he’s committed to making his coffees taste better by focusing on practices that promote quality, like strict ripe picking & improved processing techniques. Diofanor began working with Cofinet in 2017, who have helped him implement stricter protocols that has improved his coffees further. 

 

This coffee underwent one of Cofinet’s processing protocols, where cherries were soaked underwater for 30 hours before being pulped. The remaining mucilage is then rinsed off before it is dried on raised beds. La Divisa Papayo showcases a sweet, poached fruit-like acidity reminding us of pears. The juicy sweetness sits atop a round & silky mouthfeel that evolves in a gentle, floral chrysanthemum finish. We hope you will enjoy this coffee as much as we do.
