This allows for a slower and controlled flavour development, before being transferred into sealed tanks for another 24H of anaerobic fermentation. This accelerates fermentation and enhances the depth of sweetness. Through trial and error, we have achieved the goal of our process - one that balances the dense, fruit flavours of an anaerobic coffee, but retains the elegance and silky mouthfeel of a washed coffee.
