Last year, we had the privilege to collaborate with a farm whom we recently started working with, Hacienda Mallorca in Quindio, Colombia. Producer Santiago Londono is at the forefront of collaboration, research & agro-ecological practices. We picked the Castillo variety, which was developed specifically for the Colombian soil & microclimate. 

The custom process we chose was to showcase the maximum sweetness we could achieve from this cultivar, whilst ensuring the flavour integrity of the Castillo. We also wanted a 2-step fermentation before that to allow different flavour compounds to develop at different rates & we left it to Santiago to decide the duration of the fermentation.

Hacienda Mallorca Castillo "Our Process" is a 24hr Anaerobic fermentation, followed by a 24hr Aerobic soak, pulped & dried as a honey process for 42 days. This combination results in a juicy coffee, with a syrupy texture & rich mouthfeel. We hope you will enjoy this coffee as much as we do!
