This coffee is produced by the Gahizi family on their family farm & processed at their renowned washing station, Gitesi. We’re humbled to be able to showcase the fruits of their labour for many years now. The primary cultivar that’s grown in Rwanda is Red Bourbon & it amazes us how diverse the spectrum of flavours are from a single variety as well as origin.
This is a natural processed coffee, which means after the extensive hand-sorting is done, the cherries are transported to raised drying beds to dry. The coffees are typically covered during the hottest part of the day as well as at night & are consistently turned to ensure an even drying process. Natural processed coffees are typically richer in mouthfeel, with a distinct fruitier expression as well.
Our roast approach brings a lively quality to the acidity, reminding us of red berries. The sweetness and mouthfeel are more pronounced compared to its fully washed version, lending a syrupy, strawberry-like sweetness along with a velvety mouthfeel.
