Nestled in the rolling hills of Circasia, Quindío, at 1,700–1,800 meters above sea level, Finca La Divisa is the culmination of three generations of coffee expertise. Spearheaded by Sebastian Gomez – a visionary producer who returned to his family’s 13-hectare farm in 2014 after witnessing the global specialty coffee movement – the estate has become a beacon of Colombian innovation. Alongside his father John (a 30-year coffee veteran) and his wife, Sebastian transitioned the farm from traditional Castillo and Caturra production to pioneering exotic varieties, planting 5,000 Gesha trees in 2018 that now yield some of Colombia’s most sought-after lots.

For this Carbonic Maceration (CM) Natural lot, Sebastian employs a meticulously timed process: cherries undergo 24 hours of aerobic fermentation to activate natural yeasts, followed by 50 hours in sealed tanks for carbonic maceration, where CO2 saturation intensifies fruit complexity without overpowering Gesha’s delicate florals. The beans are then dried on raised beds in a temperature-controlled greenhouse (below 35°C) for 22–25 days – a method that ensures even development in Quindío’s humid climate while avoiding over-fermentation.

The cup reflects this precision – preserved pineapple vibrancy meets blueberry compote richness, with a praline-like roundness that balances the coffee’s tropical acidity and syrupy sweetness. The texture is plush yet buoyant, a testament to the Gomez family’s commitment to marrying innovation with terroir transparency.

What elevates this coffee to ‘Pinnacle’ status is its rare harmony of Gesha’s innate elegance and Sebastian’s technical mastery. From the shade of native Guamo and Nogal trees to the greenhouse’s controlled drying, every step honors the farm’s motto – La Divisa (Spanish for "badge of honor") – a nod to their relentless pursuit of quality.
