Chartchai was the winner of both 1st and 2nd place in last year’s Cup of Excellence, with a fully washed Gesha as well as a honey processed one, of which we had the pleasure of showcasing both lots. We were convinced we wanted to continue this relationship \u0026amp; we’re incredibly humbled he shared this beautiful coffee with us this year.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTHE PROCESS\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eRipe cherries are hand-sorted before being depulped. This removes the skin \u0026amp; flesh leaving behind the sticky, nutrient rich mucilage. Chartchai dries his coffees in parabolic dryers, which acts as a shield against intense sunlight. We’re privileged to showcase how far Thailand has come as an origin, be it from cultivating exotic varieties or meticulous processing.
